Most likely. You can measure the resistance and extension across the range of travel and then create a custom calibration in your analysis software. Most of these sensors are linear, so the resistance change is linear with travel. Or if you don't want to worry about it you can sell them to me.
Yes. At least with CDS you can. You will end up with a linear 0-5V output, from fully compressed to fully extended. If they're old or used, you may want to run them on a scope and see if there are any areas that have signal dropout. It does happen.
