For my motorcycle (Suzuki) powered car I used a simple, big cut off switch (just two big terminals) that disconnects the battery's ground cable from the chassis. I liked the one linked below because it's quick and easy to push and kill. It is mounted on the main roll hoop (right side).
In front I have a simple, HD toggle that kills the 12v positive lead to most everything (ignition switch, etc.). It is on the left side of the dash with a red cover to increase the chances a corner worker can get to it, too.

If your engine has a magneto or runs an alternator, you need the switch with those extra connections.
It's a MC engine with a generator. So a two post switch as suggested would be ok?
